authentic sambar recipe | vegetable sambar recipe |  south indian vegetable sambar recipe with step by step process - sambar is an important part of all south indian cuisines. it is served along with almost all the south indian dishes like idlis, dosas, uttapams, vada, steamed rice etc.


although various readymade sambhar masalas are available in the market from different brands, but trust me making sambar using your own authentic sambar masala recipe will make its taste even better, fresh, aromatic and authentic.

follow this simple recipe when you want to quickly prepare delicious restaurant style sambar at home.


ingredients for vegetable sambar :

  • arhar dal (toor | pigeon pea lentils) - 1 cup
  • tamarind paste - 1 tbsp
  • bottle gourd(lauki) - 1 cup (chopped)
  • brinjal (baigan) - ½ cup (chopped)
  • lady's finger (bhindi | okra) - 4-5 (chopped)
  • french beans - ¼ cup (chopped)
  • potato - 2 (chopped)
  • Green peas - ½ cup (peeled)
  • tomatoes  - 2-3 (finely chopped)
  • onion - 1-2 (finely chopped)
  • green chilli - 2 (finely chopped)
  • ginger garlic paste - 1 tsp
  • asafoetida (hing) - 1 pinch
  • salt - add to taste
  • coriander leaves - 2 tbsp (finely chopped)

ingredients for tadka :

  • oil - 1 tbsp
  • mustard seeds (rai) - 1 tsp
  • curry leaves - 7-8
  • dry red chilli - 4-5


directions for vegetable sambar :

  • wash the arhar (toor) dal thoroughly and drain.
  • put dal with 2 cup water in a cooker and pressure cook for 2 whistles. after 2 whistle goes off cook dal for 4-5 minutes on a low flame. now turn off the gas.
  • allow the steam to escape before opening the lid.
  • blend the dal using a blender till it is smooth.
  • wash all the vegetables then cut them.
  • now add all chopped veggies, add 2-3 cup water, salt as per your taste into the dal and stir well.
  • again pressure cook for 1-2 whistle on medium to high flame. allow the steam to escape before opening the lid.
  • add the tamarind paste. if the consistency of sambar is thick, then add some water.
  • heat up a pan, and add in oil, once it’s hot add a pinch of hing.
  • next goes in the ginger garlic paste, green chilli and saute for a minute.
  • now add finely chopped onions and cook till the onions are translucent, then add in the finely chopped tomatoes.
  • stir and cook till the tomatoes are mushy.
  • then add authentic sambar masala and stir well. cook for another 2-3 minutes.
  • add this paste into the dal and veggies mixture.
  • Mash the some veggie in pressure cooker. keep aside for few minutes.
  • for tadka, heat some oil in a pan.
  • put rai(mustard seeds) in hot oil, pop the rai first then add curry leaves and dry red chilli and fry for 1-2 minutes.
  • add this tadka into the sambar and stir well.
  • keep the cooker on the stove and and then simmer the sambar for 20-30 minutes on a low flame.
  • now switch off the gas.
  • add chopped coriander then mix well.
  • now your delicious sambar is ready. serve this vegetable sambar with idli, dosa, uttapam, vada, steamed rice or any south indian dish.
