instant idlis made with rava are soft, light, airy and spongy in texture. idli made with sooji (rava) takes lesser time than the ones made with dal and rice. kids and adults everyone will love its taste.

you can serve this vegetable rava idli with authentic sambar, coconut chutney, capsicum chutney, channa dal chutney or peanut chutney. here is a quick and equally tasty version of restaurant style vegetable rava idli made with semolina at home.


ingredients for vegetable rava idli :

  • semolina (rava or sooji or cream of wheat) - 2 cups
  • yogurt (dahi) - 1 cup
  • baking soda - ½ tsp (or you can add ¾ tsp eno instead of baking soda)
  • green chilli - 1 (finely chopped)
  • ginger paste - ½ tsp
  • tomato - 2 (round sliced)
  • oil - 2 tsp
  • salt - 1 tsp (or as per required)
  • carrot - ¼ cup (grated)
  • coriander leaves (dhaniya or cilantro) - 1 tbsp (finely chopped)
  • curry leaves - 1 tbsp (finely chopped)
  • chana dal (split) - 2 tsp
  • cashew nuts - 1 tbsp
  • mustard seeds (rai) - 2 tsp
  • asafoetida (hing) - a pinch
  • water - as per required


directions for making batter :

  • take a bowl and add sooji, curd, salt into it. mix them well and keep aside.
  • now take a pan and heat 1 tsp oil and fry the cashews. remove the fried cashews in the bowl.
  • now in same pan, heat 1 tsp oil and splutter the mustard seeds.
  • then add chana dal and asafoetida. fry till the chana dal become golden brown.
  • now add chopped curry leaves and saute for another minute.
  • add ginger paste, chopped green chilies and grated carrot and saute for 2 minutes.
  • now add this whole mixture to the rava mixture and add chopped coriander leaves. mix them well.
  • add water as required and make a batter which is neither thin nor thick.
  • keep aside covered for 10-20 mins.


directions  for vegetable rava idli :

  • after 10-20 minutes, if the batter looks thick, then add a few tablespoons of water to get a medium consistency.
  • make sure that the mixture should not neither too thick nor too thin.
  • take the idli stand and grease the moulds well using oil.
  • heat water in a electric cooker or pressure cooker.
  • it's time to add baking soda/ eno in the batter and mix well.
  • let the water warm up. meanwhile, now put a round tomato slice in each of the mould.
  • pour the rava idli batter in idli moulds on top of tomato slices carefully.
  • now place this idli stand into electric cooker or pressure cooker and cover pressure cooker with the lid without the whistle.
  • steam for 10-12 minutes on medium heat.
  • open the lid and check whether the idli is cooked properly from inside. now perform a toothpick/knife test. insert a toothpick/knife in the center of the idli. if it comes out clean, your idlis are ready.
  • now remove the idli stand from electric cooker or pressure cooker and let it cool down.
  • take out each idli from the idli stand with the help of a spoon/knife and put them on a plate.
  • rava idli is ready. serve it with authentic sambar, coconut chutney, channa dal chutney or peanut chutney.
