    choley bhature is my and my family’s favorite dish. when i use to live in delhi and gurgaon, we used to get awesome chole bhature in many places. but now since i do not live in these places any more, i make this recipe often which tastes exactly same as delhi chole bhature or dilli wale ke chole bhature.

    Now this recipe is just extension of my Restaurant style chole masala recipe, but in this recipe I have also done a lot of research to give the best outcome.

    Ingredients

    Ingredients for restaurant style bhature recipe :

    • all purpose flour (maida) - 1 cup (150 gms)
    • baking powder - ½ tsp
    • baking soda - ¼ tsp
    • salt - ½ tsp
    • curd (room temp) - ¼ cup
    • water - ¼ cup (or as per required)
    • sugar - 1 tsp
    • semolina (sooji or rava) - 1 tbsp
    • ghee (clarified butter) - 1.5 tbsp
    • milk powder - 2 tsp
    • oil - for deep frying

    Instructions

    • sieve the all purpose flour(maida) with baking powder, baking soda and salt.
    • add yogurt which is at room temperature, milk powder, sooji. mix together roughly.
    • now add desi ghee into it and mix together roughly.
    • now take ¼ cup warm water in a separate bowl and add sugar. dissolve the sugar properly.
    • after that add this warm water and sugar mixture into flour mixture. mix again.
    • start to knead the dough. kneading is a key for good bhatura so knead the dough properly.
    • make a smooth and soft dough.

    • cover the dough with a wet cloth and let the dough for a minimum of 2 hours.
    • keep the dough in a warm place.
    • After 2 hours, divide the dough into small to medium sized balls.
    • roll the balls between your palms to make them even.
    • then just apply some oil on the balls and covered with the wet cloth.
    • lets the dough balls relax for 10 minutes.

    • heat oil in a kadai or pan for deep frying the bhaturas.
    • take a dough ball and flatten them. apply oil on both sides and with a rolling pin, roll the ball into oval or round shape.

    • make sure you don’t roll your bhatura a lot. make neither thick nor thin bhatura.
    • rotate the rolling board while rolling the bhatura as it much easier than lifting it, since we are not using flour to roll them.
    • when the oil is hot enough, place the rolled bhatura gently into the oil. before putting bhaturas in hot oil i just stretch them little bit.
    • first try to press the bhatura inside the hot oil. when the bhatura comes up then try pour hot oil over it.

    • this is actually very important to make your bhatura cook properly. after that the bhatura will puff up.
    • when the oil stops sizzling, turn the bhatura and fry the other side.

    • when the bhatura is light golden, remove and drain on kitchen paper towels.
    • make the rest of the bhaturas this way.
    • now your restaurant style bhatura is ready to be served. serve this hot and delicious bhatura with punjabi chole masala.
