Step by step Recipe
directions for egg bhurji recipe or masala scrambled eggs recipe :
- take a bowl. break the eggs and pour all egg yolk in the bowl.
- now add black pepper powder, oregano seasoning, ginger powder into the eggs and mix well.
- whisk the eggs gently with a fork or egg whisker for about 4 to 5 times. keep this aside.
- now finely chop all veggies : onion, capsicums , carrot, french beans. keep them aside.
- take a nonstick pan. add oil and heat.
- when the oil gets hot, add finely chopped onion.
- cook them till the onions are translucent.
- after that add rest of the finely chopped vegetables capsicums , french beans, carrot etc.
- add salt and cook them till vegetables get soft.
- now add the egg mixture and scramble lightly.
- keep stirring this mixture until small crumbs are formed.
- cook them for more 7-8 mins and keep whisking them regularly.
- stir anda bhurji or egg bhurji constantly to prevent burning.
- add some finely chopped spring onion and stir well.
- cook until properly cooked. after that switch off the gas.
