methi ki launji is a combination of sweet, sour, bitter and spices and also a popular indian condiment. fenugreek chutney or methi chutney has a very unique and yummy taste.


traditionally methi ki launji is served with poori (fried puffed bread), samosa, kachori, stuffed parathas , and even mathris, most probably paired to aid digestion of fried food. the best part about this chutney is we can keep it refrigerated and use it for 4-5 days as an when we like.

  • fenugreek seeds (methi dana) - ½ cup
  • fennel seeds (saunf) - 1 tsp
  • cumin seeds (jeera) - 1 tsp
  • whole dry red chilli - 6-7
  • sugar - ¼ cup
  • dried mango powder (amchur) - 2 tbsp
  • coriander powder - 1 tsp
  • chilli powder - ½ tsp
  • turmeric powder - ½ tsp
  • salt - as per taste
  • water - 2 cup


direction for methi ki launji recipe | fenugreek seeds chutney recipe | methi chutney recipe :

  • soak fenugreek seeds, fennel seeds, cumin seeds, whole dry red chilli in water for 5-6 hours or more. the seeds will swell to be about 3 times in volume. drain the water.

  • soak dried mango powder (amchur) in 1 cup of water for 2-3 hours. however, it is ok to soak it at the same time you soak fenugreek seeds. longer soaking will do no harm. if you are using raw mango slices, they need to be soaked for six hours.
  • heat a wok/kadai on high heat. add the mango powder and one more cup of water and mix well. 

  • now add soaked seeds and red chilli into the wok/kadai and mix well.
  • after that add turmeric powder, salt, red chili powder, asafetida, coriander powder and mix well.

  • cook over high heat until the first boil. then reduce the heat to low-medium and cook for another 20-30 minutes. keep stirring in between.

  • switch off the stove and cool down the temperature of methi ki launji or fenugreek seeds chutney.
  • serve cold this yummy and easy methi ki launji with poori, samosa, kachori, roti or paratha.
