Kaddu ki Sabzi recipe is the main dish made by Halwai in Bhandara. Kashifal's sour-sweet vegetable tastes delicious, as well as it is also very helpful in digesting fried Indian bread like poori and kachori.

Pumpkin sabji is also known as Kaddu Sabji, Petha Sabji, Kumhra Sabzi, Kasiphal Sabzi, Sitaphal Sabji, khatta meetha kaddu, and kaddu ki sabzi in some places. This yummy and delicious sabji is typically served in homes as a side dish to chapati or Poori or Paratha during lunch or dinner but also tastes amazing with Kachoris.

    Kashifal Sabzi can be made on regular days and also during Navratri or Ekadashi fasting. This kaddu sabji or delicious pumpkin ki sabzi is a favorite at my home. During the fast or vrat, we have it with singhara atta pooris or kuttu poori.

    Ingredients

    Bhandarewali Halwai Style Kaddu Sabzi Recipe | Kashifal Sabzi Recipe Ingredients :

    • Pumpkin (Kaddu) - 500 gm
    • Mustard Oil - 3 tsp
    • Asafoetida (Hing) - ¼ tsp (a pinch)
    • Fenugreek seeds (Methi dana) - ½ tsp
    • Tomato - 2 (finely chopped)
    • Ginger - 1 tsp (finely chopped)
    • Coriander Powder - 2 tsp
    • Turmeric Powder - 1 tsp
    • Kashmiri Red Chilli Powder - 1 tsp
    • dry red chilies - 2
    • Fennel Seed coarse Powder - 1 tsp
    • Garam Masala - ½ tsp
    • Salt - 1¼ tsp (or as per taste)
    • Water - ½ cup
    • Sugar - 2 tsp
    • Dry Mango Powder (Amchur) - 1 tsp
    • Kasuri Methi - 1 tsp 
    • Coriander - 1 tbsp (finely chopped)

    Step by Step Recipe

    How to make Bhandarewali Halwai Style Kaddu ki Sabzi Recipe | Kashifal Sabzi Recipe with step by step recipe:

    • To make Bhandare Wale Halwai Style Kaddu Sabzi, first of all, we will take green pumpkin and cut the pumpkin into small pieces without removing the peel and wash it.
    Pumpkin Sabzi
    • Finely chop the tomatoes and ginger. You can use a handy chopper for this but don’t grind it into the paste.
    • Turn on the flame and heat a Kadai (wok).
    • Firstly in Kadai, add 3 tsp mustard oil and heat. 
    Pumpkin Sabji
    • Now add ¼ tsp Asafoetida (Hing) and ½ tsp fenugreek seeds (methi dana) and Fry for 15 seconds on a low flame.
    Kaddu ki sabji
    • After adding 2 dry red chillies and fry for 10 seconds and this is totally optional.
    • Add finely chopped tomatoes, ginger and cook them for 3-4 mins.
    Kaddu ki sabzi
    • Further, add ¼ tsp salt and cook for another 2 minutes or until they become mushy.
    Petha Sabji
    • Additionally, add 2 tsp coriander powder, 1 tsp turmeric powder, 1 tsp Kashmiri Red chili powder, 1 tsp Fennel Seed coarse Powder.
    • Mix well and saute for 2 minutes until the spices are well combined with tomatoes.
    Kashifal ki Sabji
    • After that add chopped pumpkin, ¼ cup water, 1 tsp salt (or as per taste), and mix well. fry for about 2-3 minutes.
    Kashifal Sabzi
    • Cover the Kadai. Cook for 6-7 minutes on a low flame and stir in between.
    • Cooked this kaddu sabzi until the pumpkin is cooked well.
    Sitafal Sabji
    • Add 2 tsp sugar, 1 tsp Dry Mango Powder (Amchur), ½ tsp garam masala and mix well. Cook for 2 minutes on a low flame and stir in between.
    Sitafal Sabzi
    • Lastly, add 1 tsp crushed Kasuri Methi and finely chopped coriander and mix well. Cook for another 4-5 minutes on low flame.

    • Switch off the gas.
    • Finely enjoy hot Bhandare wali Halwai Style Kaddu ki Sabzi (pumpkin sabzi) with any Indian bread.

    13. Cooked this kaddu sabzi until the pumpkin is cooked well.
    14. Add 2 tsp sugar, 1 tsp Dry Mango Powder (Amchur), ½ tsp garam masala and mix well. Cook for 2 minutes on a low flame and stir in between.
    15. Lastly, add 1 tsp crushed Kasuri Methi and finely chopped coriander and mix well. Cook for another 4-5 minutes on low flame.
    16. Switch off the gas.
    17. Finely enjoy hot Bhandare wali Halwai Style Kaddu ki Sabzi (pumpkin sabzi) with any Indian bread.
