appam or appe is always been the most popular and favorite snack for breakfast. these healthy version of bread rolls can be served with tomato ketchup, coriander chutney, mayo or schezwan sauce for extra flavour.

it is referred with different names all over south india but the taste and preparation remains fairly consistent. it is known as appam, appe, paddu, appa or unniyappam etc.


this recipe is a very easy and quick snack recipe which is prepared from leftover bread slices and mashed potatoes. it is typically consumed as a appetizer or as a starters or as a evening snack.



ingredients for bread roll or potato stuffed bread rolls :

  • bread - 8 slice
  • potatoes - 4 medium (boiled)
  • roasted cumin seeds powder (jeera powder) - ½ tsp
  • green chili - 1 (chopped) (optional)
  • coriander powder (dhania) - 2 tsp
  • red chili powder - ½ tsp
  • garam masala - ½ tsp
  • mango powder (amchur) - 1 tsp
  • salt - as per taste
  • coriander leaves (cilantro) - 2 tbsp (finely chopped)
  • water - 1 cup
  • oil - 2 tbsp
  • appam (appe) pan


directions for bread roll or potato stuffed bread rolls :

  • pressure cook potatoes for 3-4 whistles. wait till it cools.
  • once cool, peel off the skin, and roughly mashed them well with a potato masher or with a back of a ladle.

  • take a bowl and  add all the ingredients: mashed potatoes, roasted cumin seeds powder, coriander powder, red chili powder, mango powder, salt, garam masala, finely chopped green chili and coriander leaves(cilantro) for bread roll stuffing.
  • mix all the ingredients very well.

  • divide potato stuffing in equal parts.

  • take a bread slices and cut the sides and cut into two parts.

  • dip the bread slice into water just for a second.
  • immediately squeeze the excess water from the bread.
  • place the some filling in the center of the bread.
  • after that wrap the bread and give an oval shape with the help of both hands.
  • make sure to pinch the edges of bread and secure tight.
  • if there is any exposed potato filling, it will leak out.
  • make all the stuffed bread rolls this way.

  • now heat an appam or appe pan and pour little oil in its each mold.

  • let them simmer for 3-4 minutes on low-medium flame.
  • when the appe get golden brown from beneath, flip the side and continue cooking until golden brown from this all side as well.

  • it can take 2-3 minutes. cook the appams until they get golden brown on all the sides.
  • take out the roasted appams in a plate and similarly prepare the rest as well.
  • now your hot and delicious bread appam (no fry bread roll) is ready to be served.
  • you can serve these bread appe stuffed with potato masala or no fry bread roll with any indian chutney or dip like tomato ketchup, coriander chutney, mayo or schezwan sauce.

makai paratha or makka ka paratha is ideal for breakfast, lunch and dinner. they’re quite tasty, and your entire family would love the treat.

serve this hot makai paratha with any sabzi like as dhaba style aloo curry, arbi sabzi, aloo gobhi sabzi, bhandara aloo sabzi or arbi masala etc.


ingredients for makka paratha recipe or makai paratha recipe:

  • corn flour (makki atta)- 2 cups
  • carom seeds (ajwain) - 1 tsp
  • oil – to cook the parathas
  • asafetida (hing) - a pinch
  • salt – as per taste
  • lukewarm water - as required


directions for makka paratha recipe or makai paratha recipe:

  • in a bowl add corn flour, salt, carom seeds, asafetida, and mix them well.
  • add a little lukewarm water at a time and mix it with flour in a rotating motion from the center of the bowl to outward until it form a dough and it cleans the sides of the bowl.
  • if  the dough becomes sticky then add more flour or if the dough is dry then add some water.
  • knead the dough for few minutes until the dough become firm and smooth, just the right rolling consistency.
  • knead the dough with wet hands make a ball.
  • prepare round rotis by patting the batter on a wooden board with hands or you can also roll by keeping the batter in between 2 sheets of polythene.
  • or flatter the dough with your palm, and then roll it into a spread using the rolling pin.

  • now pick the paratha, pat in between your hands to shake off the excess flour and place it on the hot tawa.
  • in about 30 seconds  the little bubble will start appearing, with the help of spatula  turn  the  paratha over to the other side and cook for few seconds.

  • drizzle ½ teaspoon of oil over the paratha and with the spatula spread evenly, and then turn it over to other side, drizzle and spread ½ teaspoon oil, and cook.
  • with the spatula press down gently all over the surface of the paratha in circular motion on both the sides to make it crispy.
  • keep flipping the paratha back and forth few times for 2 to 3 minutes or until both sides become light brown and you have the desired crispness take the paratha off the griddle.  
  • serve hot makka ka paratha or makai paratha with dhaba style aloo curry, arbi sabzi, aloo gobhi sabzi, bhandara aloo sabzi or arbi masala.
