use any kulcha which you like or prefer for making these stuffed kulchas. these can also be made in sandwich toaster or a grill. you can also use boiled green peas in this recipe. they are best served with green chutney or tomato ketchup.

when i boil potatoes, i boil some extra potatoes. you never know where they will come handy. i keep in the fridge and use them in a day or two. you can use them to make variety of aloo recipes like aloo paratha, aloo tikki, dhaba style aloo curry, kuttu pakodi, aloo masala, samosa pinwheels, aloo masala sandwich etc.


ingredients for instant aloo stuffed kulcha recipe or aloo kulcha recipe :

  • kulcha slices - 4
  • potatoes - 3-4 medium (boiled)
  • roasted cumin seeds - ½ tsp
  • green chili - 1 (chopped) (optional)
  • coriander powder (dhania) - 2 tsp
  • red chili powder - ½ tsp
  • garam masala - ½ tsp
  • mango powder (amchur) - 1 tsp
  • salt - as per taste
  • coriander leaves (cilantro) - 2 tbsp (finely chopped)
  • butter or ghee - 2 tbsp
  • tomato ketchup - 2 tbsp


directions for instant aloo stuffed kulcha recipe or aloo kulcha recipe :

  • pressure cook potatoes for 3-4 whistles. wait till it cools.
  • once cool, peel off the skin, and mashed them well with a potato masher or with a back of a ladle.

  • take a bowl and add mashed potatoes with all the spices:, cumin seeds, coriander powder, red chilli powder, mango powder, salt, garam masala.

  • now add finely chopped green chilli and coriander leaves (cilantro).
  • mix all the ingredients very well.

  • take a slice of kulcha and spread some tomato ketchup.

  • now spread some aloo masala on the kulcha.

  • now cover it with other plain kulcha.

  • heat a pan/tawa and grease some butter or ghee on tawa.

  • place the stuffed kulcha on the heated pan.

  • grease the butter on the other side now.

  • press down gently with a spatula and grill the sandwich until both sides are crispy and golden brown.

  12. press down gently with a spatula and grill the sandwich until both sides are crispy and golden brown.
  13. cut the potato stuffed kulcha and serve hot with green chutney or tomato ketchup.

chilli paneer, chilli mushroom, gobi manchurian, vegetable manchurian, schezwan fried rice, veg fried rice, schezwan egg fried rice are some of the most common ones from the​ indo chinese cuisine.​ whenever we order an indo chinese menu then egg fried rice is always there. along with fried rice we usually order different indo chinese vegetables dishes like gobi manchurian, vegetable manchurian or hot and sour vegetable sauce etc.

you can add vegetables as per your choice in this egg fried rice. here i have used onions, french beans, spring onion, cabbage, carrots and capsicums. egg fried rice is perfect as a snack or main course for egg lovers. follow this simple recipe to prepare delicious restaurant style egg fried rice.


egg fried rice can be served plain or with other popular chinese saucy dishes like chilli paneer, chilli mushroom, gobi manchurian, vegetable manchurian, etc.

ingredients for egg fried rice recipe or indo chinese style egg fried rice recipe :

  • basmati rice - 2 cup
  • onion - 1 small size (finely chopped)
  • capsicum (red, green and yellow) - ½ cup (finely chopped)
  • carrot - ½ mid size (finely chopped)
  • spring onions - 1-2 (finely chopped)
  • cabbage - ¼ cup (finely chopped)
  • french beans - 2-3 (finely chopped)
  • oil - 4-5 tbsp
  • ginger garlic paste - 1 tsp
  • red chilli garlic sauce - 1 tsp
  • vinegar - 1 tbsp
  • soy sauce - 2 tbsp
  • black pepper powder - ½ tsp
  • m.s.g ( monosodium glutamate) or ajinomoto - ½ - 1 tsp
  • water - 2-3 liter (as per required)
  • sesame oil - ½ tsp
  • salt - as per taste
  • egg bhurji - ½ cup (click here for egg bhurji recipe)


directions for boiling the rice :

  • boil water in a deep pan.
  • after the water comes to a boil then add the rice.
  • now add salt, 2 tbsp oil and mix well.
  • cook on a medium flame for 8 to 10 minutes or till the rice is 90% cooked.

  • make sure you boil the rice properly about 90 %.
  • drain them and wash the rice with cold water so that cooking process is stopped and the excess starch is removed.

  • after washing the rice with cold water add 2 -3 tbsp oil and mix well with hands.

  • cut the vegetables as mentioned in ingredient section.

  • heat a wok (kadai) and add 1-2 tbsp oil.
  • put on the flame to high.
  • now add chopped onions and cook the onions for about 2 minutes.

  • add ginger garlic paste and cook for another one minutes.
  • after that add chopped carrots and chopped beans. keep the flame on high and roast the veggies for 2-3 minutes. now add chopped capsicum and chopped cabbage into it. saute the veggies for 1-2 more minutes.

  • now add boiled rice, soy sauce, vinegar, red chilli garlic sauce into the veggies and mix well.
  • add m.s.g ( monosodium glutamate) or ajinomoto, salt, black pepper powder and mix well.

  • now add ½ tsp sesame oil and egg bhurji and toss it well and stir fry for 3-4 minutes on high heat.

  • sprinkle some chopped spring onion on it. mix it well.
  • turn off the flame.
  • hot egg fried rice is ready to be served. serve this hot and delicious egg fried rice plain or accompanied with veg manchurian curry or vegetables in hot and sour sauce.

  • you can also add vegetables as per your choice.
  • if you are using mushrooms then the mushrooms have to be chopped fine, so that they cook quickly on a high heat while stir frying.
