Basically, Veg Macaroni Recipe is a fusion recipe that is prepared with narrow elbow-shaped macaroni pasta, some Indian spices and veggies of your choice like onion, tomato, capsicum, carrot, beans etc. It’s a Spicy version of the Macaroni Recipe.

Macaroni Pasta Dish is originally from Italy and is served with parmesan cheese but in India, this has been adapted and improvised with different flavours. That’s why it’s a homemade version of a dry macaroni pasta recipe.

    • Macaroni (elbow-shaped pasta) - 2 cup
    • Garlic - 4 cloves (finely chopped)
    • Onion - 2 (finely chopped)
    • Green Chili - ½ tsp (finely chopped)
    • Ginger Paste - 1 tsp
    • Tomato - 2 (finely chopped)
    • Capsicum - 1 (finely chopped) 
    • Asafoetida (Hing) - A pinch
    • Oil - 4 tsp
    • Oregano Seasoning - ½ tsp (click here for recipe)
    • Black Pepper Powder - ¼ tsp
    • Kashmiri Red Chili Powder - ½ tsp
    • Maggi Masala or Garam Masala - ½ tsp
    • Tomato Ketchup - 2 tsp
    • Vinegar - 1 tsp
    • Coriander Leaves - 2 tbsp (finely chopped)
    • Salt - 2 tsp (adjust as per your taste)

    Note: You can add any vegetable as per your taste or choice like carrots, green beans, cauliflower, capsicum, baby corn, broccoli, potatoes, green peas, etc.

    Ingredients :
    • Macaroni (elbow-shaped pasta) - 2 cup

    Instructions :

    2. Heat up a Kadai/wok and add 2 tbsps of oil.
    3. Once the oil becomes hot add a pinch of Asafoetida (Hing).
    4. Further, add 3 small finely chopped garlic cloves and Saute till the garlic is light brown.
    5. Now add finely chopped onions and cook on medium-low flame till the onions are translucent and keep stirring often.
    6. Further, add 1 tsp ginger paste or freshly grated ginger, ½ tsp green chilli and mix well. Saute them for few seconds.
    7. Now add finely chopped tomatoes and mix well.
    8. Cook them for 2-3 mins on a medium-low flame till they soften and become pulpy.
    9. Now add finely chopped capsicums or any other vegetables and mix well.
    10. Saute the veggies for 2 minutes or till veggies are half cooked.
    11. Add red chilli powder, black pepper powder and Maggi masala or garam masala, tomato ketchup, oregano seasoning, salt, and vinegar. Mix well.
    12. Finally, it’s time to add macaroni and mix gently, coating the masala sauce and macaroni well. Cook for 2 minutes and keep stirring often.
    13. Add some finely chopped green coriander leaves into the masala macaroni and mix gently.
    14. Turn off the flame.
    15. Finely, Steaming hot Indian style veg macaroni or masala macaroni pasta is ready to be served.
