Rava Idli (Semolina idli or Sooji idli) is a very popular and quick South Indian breakfast dish which is very simple to prepare at home.
Instant idlis made with rava are soft, light, airy and spongy in texture. Idli made with sooji (semolina or rava) takes lesser time than the ones made with dal and rice. Kids and adults everyone will love its taste.

Ingredients for rava idli or instant idli :
- Semolina (Rava or Sooji) - 2 Cups
- Yogurt (Dahi) - 1 Cup
- Baking soda - ½ Tsp ( or you can add 3/4 Tsp Eno instead of Baking Soda)
- Oil - 2-3 Tsp
- Salt - as per taste
- Water - as per required

Directions for rava idli or instant idli :
- Take a bowl and add sooji, curd, salt into it. Mix them well and keep aside for 10-20 minutes.
- After 10-20 minutes, if the batter looks thick, then add a few tablespoons of water to get a medium consistency.
- Make sure that the mixture should not neither too thick nor too thin.
- Now add 1 Tbsp oil in it. Mix well.
- Take the idli stand and Grease the moulds well using oil.
- Heat water in a electric cooker or pressure cooker.
- It's time to add Baking Soda/ Eno in the batter and mix well.
- Let the water warm up. Meanwhile, Pour the rava idli batter in idli moulds carefully.
- Now place this idli stand into electric cooker or pressure cooker and cover pressure cooker with the lid without the whistle.
- Steam for 10-12 minutes on medium heat.
- Open the lid and check whether the idli is cooked properly from inside. Now perform a toothpick/knife test. Insert a toothpick/knife in the center of the idli. If it comes out clean, your idlis are ready.
- Now remove the idli stand from electric cooker or pressure cooker and let it cool down.
- Take out each idli from the idli stand with the help of a spoon/knife and put them on a plate.
- Now soft, light, airy and spongy Rava Idli is ready. Serve it with Authentic Sambar, Coconut Chutney, Channa Dal Chutney or Peanut Chutney.
